4 lbs Ground Beef - KC Angus Beef 85/15 beef in 2 lbs packs suggested for best flavor.
3/4 lbs Stew Meat - Diced small
2 Smaall cans - Dark Red Kidney Beans
2 Large Cans - Light Red Kidney Beans
2 - 96 oz - Campbells Low Sodium Tomato Juice
1 - Large can Contadina Tomato Paste
2 tbsp - Granulated Garlic
1/2 tsp - Ground Black Pepper
1/2 cup - McCormicks Chili Powder
30 whole Pearl Boiling Onion
2 Bags - Fritos Scoops
1# - Shredded Cheddar Cheese


Brown Ground Beef in a large stock pot and do not drain the juice
Brown Stew Meat in a skillet with 2 Forkfuls of garlic. Drain and rinse beans and set aside.
Pour stew meat and garlic into stock pot add tomato juice, remainder of garlic, chili powder, pepper, beans.
Simmer on Medium Medium Low heat stirring about every 10 minutes until the chili is boiling well.
Clean onions and add after the first hour of the chili cooking.
Turn element down to Low Medium Low let cook about 3 1/2 more hours for a total of 4 1/2 hours.

Dish into bowl, cover with shredded cheese, Fritos, and enjoy.

For spicier version add 1 cup of Chili Powder (instead of 5/8 of a cup), 1/2 a meduim size green pepper, and 1 tablespoon of ground mustard.
